Simple Summer Recipes for New Parents

All around the Pacific Northwest, fresh produce is in abundance. Tomatoes, zucchini, cucumbers, more tomatoes, berries, lettuce, green beans, and more tomatoes. You see where I’m going here?

So what does this have to do with being pregnant or having a new baby? Growing a baby and then feeding them requires some solid nutritional foundation, and the best way to get that is through some fresh ingredients.

As postpartum doulas, we know you don’t have much time on your hands to spend too much time in the kitchen, so we’re sharing our ridiculously simple summer salsa recipe and other recipes that go along with it.

Just a little FYI, if there is time in a shift, your doula may be able to make some simple foods FOR YOU? I know, right!?!

The first recipe out of the gate is a our favorite salsa recipe that my daughter taught me how to make. So grab all those tomatoes from your garden: Roma, cherry, grape, Early Girls…..all of them. I promise that there’s minimal chopping or dicing in this recipe. It really is ridiculously simple. Use this salsa as a base for some delicious and nutritious recipes (I’m sharing two of my favorites!), as well as, a great vessel for chips. Just sayin’.

Everybody SALSA!!!!

Simple Roasted Salsa

1 large white onion, cut into large chunks 3 large cloves garlic, unpeeled

2 jalapenos, ends cut off

1 bunch cilantro

1 lime

Tomatoes- cherry, grape, Roma…any variety…. cut into chunks (if needed)

Sea salt and fresh ground pepper to taste

Preheat oven to 450 degrees

On large baking sheet lined with foil or parchment paper, place onion, jalapenos, garlic at one end and cover rest of pan with tomatoes. Roast for 20 minutes. Let cool.

Test jalapeno for “heat”, remove seeds and veins as desired.

Add ½ tomatoes, onions, garlic, cilantro and the juice of ½ lime to blender. Add jalapeno as desired. Add 1 tsp sea salt and ½ tsp black pepper. Blend to desired consistency. Place in large bowl (big enough for both batches). Repeat this step. Stir all batches together in large bowl. Place in lidded containers. Refrigerate or freeze.

Now you have this beautiful summer salsa made with all the fresh goodness of the season and, after using much restraint, you set the tortilla chips aside and begin making dinner. The following meal can be made either as dinner or breakfast, and with a side of green salad or fresh fruit or even a little slice of beautiful bread, you’ve got a delicious, nutrient packed meal.

Salsa Poached Eggs

1.5 cups salsa (or 1 can diced tomatoes)

4 eggs

Olive oil

2 oz Monterey Jack Cheese, shredded

Preheat pan over medium high heat. Add olive oil; once hot, add salsa or canned tomatoes); bring to a boil. Crack each egg into the hot tomato mixture. Reduce heat to medium-low, and cover tightly with a lid. For over hard eggs, cook for 8 minutes. Check eggs at 5 minutes if you prefer a runnier yolk.

While we’ve got the salsa out, let’s put together some shredded chicken for tacos or quesadillas or to top a salad!

In a recent poll on Family Tree Doula Services’ Facebook Page (found here), 60% of you said that you preferred an old school crock pot over an InstaPot. We were surprised, but happy, since crock pots are our friends. So pull out your crockpot and get ready to make the simplest shredded chicken EVER!

Crockpot Shredded Chicken

3 boneless, skinless chicken breasts (thighs can be substitued)

2 cups salsa

1 tsp garlic powder

1 tsp onion powder

1 tsp cumin

Place chicken in crock pot; season with garlic powder, onion powder and cumin; cover with salsa. Cook on low for 6-8 hours. Let cool. Using 2 forks to shred and mix shredded chicken with salsa in crock pot.

If there is too much liquid remaining, leave shredded chicken in crock pot, turn on high and leave uncovered. Stir frequently until desired consistency.

I said these recipes are simple and nutritious.
